Nothing daring or out of the ordinary here. But sometimes, after a day that's put you through the ringer and back again, you need some comforting. And for me, comfort comes through the classics. I needed a tomato, mozzarella, and basil hug.


Preheat your oven to 450F. Thinly roll out your pizza dough (it helps to let it rest for at least an hour in a bowl covered by a tea towel) and top with some grated garlic, olive oil, and a good sprinkle of Kosher or sea salt. Place this onto your pizza stone or a baking sheet and bake for about 6 or 7 minutes. Remove from the oven and top with sliced tomato, fresh mozzarella, and basil. Return to oven for another 5 minutes until cheese has melted and the crust is cooked through. Drizzle with a little bit of aged Balsamic. Pour a glass of Barbera. Take a bite and have a sip.
Monday's over and done with.
